The Agriculture Institute was born on the first of December 1882 beside the Pavonare of the Cascine and in 1935 transferred to its actual situation. The Institute occupies round about 14 acres of land.

The Consortium “Gallo Nero”
The Chianti Classic consortium was founded in 1944. It was the first in its kind built in Italy. It is universally know with the name “Black Cock Consortium”. In the centre of its stem is figured a black cock whose profile reminds undisputable the breed called “Valdarno”.

Chianti is an antic traditional land. Starting from the Etruscans there has always been an evaluating civilization, with continues disputes. Well known for its splendid landscapes, which were the background in paintings done by the famous renascent artist and nominated for the excellent products, which are born from its land thanks to the favourable environment.

It is the first place in the world to be  delimitated by a legal document as a high quality wine production area, as was used by the historical ban promulgated in 1716 by Granduca of Toscana Cosimo  III.

The legend tells that to put an finish to the never ending disputes between Florence and Siena (12th  century) they resorted to a very particular race. The protagonist were 2 horse riders one from each town. The riders were suppose to leave their town gates when the cock crowed at sunrise and they were to ride towards each other as fast as they could and where they meet that was the land boundary of their town. However the Florentines used the Black Cock and starved it for many days. Therefore because rooster was hungry it crowed long before sunrise. Thus the Florentine rider had an advantage and could ride longer and gain more territory. The riders meet at Fonterutole Castellina  and that became the boundary called Croce Fiorentina.
